芋頭餡 Yu-Tou (Taro) Filling

材料 Ingredients
芋頭 Taro1 磅 lb (450g)
無鹽牛油 Unsalted butter2 大匙 Tbs
糖 Sugar7 大匙 Tbs
鹽 Salt1/8 小匙 tsp
牛奶Milk 3 大匙 Tbs

做法﹕
1.先將奶油放在室溫下變軟﹐或是用微波爐加熱8秒使其變軟。
2. 將芋頭洗乾淨去皮切塊,放進蒸籠或電鍋蒸到用叉子可輕易插入的程度。(註﹕手碰生芋頭會發癢﹐因此削芋頭皮時最好套塑膠套或戴手套。也可以連皮蒸﹐等蒸熟後再將皮刮下。)
3. 加入牛油,糖和鹽趁熱將芋頭壓成泥。再加入牛奶仔細攪拌均勻。然後一次放一點牛奶攪拌到你要的稠度 (你有可能需要更多的牛奶)。
4.芋頭餡冷卻後放入冰箱直到要使用時再取出。用剩下的可以放在冷凍庫待下次使用。



PROCEDURE:
1.Place the butter under room temperature to make it soft. Or you can heat the butter in a microwave for 8 seconds.
2. Wash and peel the taro. Cut it into small chunks. Steam the taro in a rice cooker or a steamer until the taro is tender (a fork can easily poke through). (Note: Raw taro will make your skin itchy. You'd better wear a plastic bag or glove when you cut it. Or you can steam the taro with skin, then scrape out the skin later.)
3. Add the butter, sugar and salt to the taro. Use the back of a fork to mash the taro until it becomes puree. Add the milk (1 tbs. at a time, you may need more milk.) and continue to beat the taro until it reaches desired consistency.
4.After the taro filling cools down, store it in a fridge. You can store the unused taro filling in a freezer.
